Dinner

Once again we have “beef for fajita” in our meat box delivery, so we decided to do a riff on beef and broccoli stir fry, where the broccoli was first cooked in a butter soy mix, and served under the beef in a bowl.

  • The ‘fajita’ beef cost $14.41 for a full pound of beef, or $7.21 per very generous serve
  • The broccoli was $1.59 or 80c per serve
  • Add 45c for butter, soy and other seasonings.

A little meat heavy but pretty tasty for $8.46 per serve.

Oct 15: Egg Salad Roll; Vegetable Gyoza with Ginger Miso Broth

Lunch

We loosely try for a “meatless Monday” so today’s lunch was a panini roll finished in the oven and filled with egg salad and sprouts.

  • The panini roll is 63c per serve
  • The egg salad is $3.69 for 10 oz and we used 2 oz per serve, or 92c per serve
  • The nanoshoots cost $2.50 and we shared about ¼ or 31c per serve.

We enjoyed this roll a lot for $1.86 per serve.

Dinner

Not only is it a quick and easy meal, but the Vegetable Gyoza in Ginger Miso Broth is also meat free!

  • The Miso Ginger broth was $1.99 or $1.00 per serve
  • The gyoza were $3.99, or $2.00 per serve
  • Add 20c for seasonings.
  • A pastured egg is 50c.

A great tasting, simple and quick meal for $3.70 per serve.

Oct 14: Pinto Bean & Andouille Stew on Fry Bread with Egg; Bratwurst with Apple Bacon Slaw

Lunch

Since we already had the Pinto Bean and ‘Andouille sausage’ made (although with Chorizo) we decided to do some ‘fry bread’ (toast in the panini press) and top with an egg.

  • The pinto bean chili is $1.85 for a full serve, but we had a bit over half a serve each, or $1.11 per serve.
  • The bread is 16c a slice
  • A pastured egg is 50c
  • Add 30c for butter.

This version of the Pinto bean stew is pretty good. On toast with an egg it’s great for $2.07 per serve.

Dinner

We thought we’d use all the slaw on Saturday night, but with left overs, we rethought our plan and defrosted some Trader Joe’s Bavarian Bratwurst and grilled them to serve with the salad.

  • The bratwurst are $3.49 for the pack, or $1.75 per serve
  • The salad is $1.19 per serve.

A pretty good meal for $2.94 per serve.

Oct 13: Panini Rustic Rolls with Egg Salad & Sprouts; Pan Fried Pork Chops with Apple Bacon Slaw

Last time we stuffed  some par-baked panini rolls with egg salad and mixed sprouts we thought it was pretty good, so we did it again.

  • The panini roll is 63c per serve
  • The egg salad is $3.69 for 10 oz and we used 2 oz per serve, or 74c per serve
  • The nanoshoots cost $2.50 and we shared about ¼ or 31c per serve.

We enjoyed this roll a lot for $1.68 per serve.

Dinner

The Foodies had guests for dinner so we chose some boneless pork chops and pan fried them in butter, serving with a little Apple-Bacon Slaw. We got six serves from the salad.

  • The pork chops were $11.24 for 12oz or $5.62 per serve
  • Three slices of bacon are $2.06 or 34c per serve
  • The cabbage was $1.29 or 22c per serve
  • The Envy apples were $2.58 or 43c per serve
  • Add 20c for apple cider vinegar and seasoning.

Dinner tonight was a great meal for $6.81 per serve. The pork chop was perfectly medium rare, and the salad had a great balance of acid, sweetness, salt and fat!

Another smoked trout version of a Cobb Salad, which we enjoy more than the traditional version.

  • Grape tomatoes were $2.49 for the pack, but we used half or 63c per serve
  • We used one can of smoked trout per serve at $3.49
  • Add 40c for baby spinach and balsamic glaze.

We always enjoy this salad for $6.71 per serve.

Oct 11: Popeye’s Chicken with Pinto Bean & Andouille Sausage; Rib Eye with Spinach, Tomato, Olives and Feta Salad

Lunch

With nothing else planned for lunch, we revisited the Popeye’s Fried Chicken but with our own home-made pinto bean and ‘andouille’ sausage mix. This time we made it with chorizo sausage instead of andouille.

  • An 11 piece pack is $14.99 and we had two pieces each, or $2.73 per serve
  • The pinto bean chili is $1.85 for a full serve, but we had a bit over half a serve each, or $1.11 per serve.

The chorizo version of the pinto bean chili is more smokey and less spicy, but good – probably better than Popeye’s! A good meal for 3.84.

Dinner

It’s been a while since we last had dry aged rib eye, but we had one in our Keller Crafted meat box this month, and we couldn’t wait to grill it. We served with an improvised salad of baby spinach leaves, cherry tomatoes, green olives and feta.

  • At 10 oz the rib eye is a little smaller than previously (12 oz) but $8.10 per serve
  • Baby spinach was $1.99, or 50c per serve
  • The Valpresso feta was $9.99 for the tin, but we used 1/6, or 55c per serve
  • The jar of green olives is $4.49 and we used about half, or $1.13 per serve
  • The cherry tomatoes were $2.99 and we used half or 75c per serve
  • Add 20c for balsamic vinegar.

An enjoyable meal for $10.73 per serve.

Oct 10: Popeye’s Fried Chicken; Red Wine and Mushroom Meatloaf, Kabocha Squash and Sugar Snap Peas

As Foodie Philip was picking up cement nearby, a trip to Popeye’s was convenient.

We always enjoy this meal for $4.73 per serve.

It was time to revisit the meatloaf meal of a couple of nights ago. Revisit, as in, do an exact do-over of the meal!

  • Two large eggs are $1.00 or 25c per serve

  • Add 20c for Worcestershire sauce and other spices per serve
  • Sugar snap peas were $4.99 and we shared ⅓, or 83c per serve
  • The kabocha squash was $3.67 and we shared half, or 46c per serve.

This meatloaf recipe is always good and it paired well with the baked kabocha squash and sugar snap peas for $8.04 per serve.

 

Oct 9: Egg Salad & Sprouts in a Panini Roll; Dutch Mustard Soup

For lunch we finished baking some par-baked panini rolls and stuffed them with egg salad and mixed sprouts.

Cooler weather is an opportunity for soups, and one of our favorite soups is Dutch Mustard Soup, which is just onion, leak, cream and mustard, but totally delicious.

  • Bacon is $4.99 and we used 3 rashers, or 83c per serve
  • Yellow onions were $2.79 for 2 lb, or 23c per serve
  • The leeks were $2.99 and we used half or 75c per serve
  • Add 10c for butter
  • Garlic adds 5c per serve
  • Heavy cream adds 50c per serve
  • Mustard adds 25c per serve
  • Add 20c for the remaining seasoning.

This is a simple but great soup for $2.91 per serve, with a little left over.

Oct 8: Smoked Trout & Avocado; Grilled Mushroom with Onion Blue Cheese Sauce and Sugar Snap Peas

Lunch

Since we had an avocado that was ready to go, it had to be used today! We paired it with canned smoked trout for a good lunch sandwich.

A good lunch for $2.67 per serve.

Dinner

Since mushrooms are almost meat, and today is meatless Monday, we grilled a pair of portobello mushrooms as if steak, and topped with the fabulous onion, blue cheese cream sauce, and paired with sugar snap peas.

  • Onions were five for $2.49 and we shared one or 25c per serve
  • The mushrooms were $2.99 or $1.50 per serve
  • Heavy cream was $1.79 and we used half or 45c per serve
  • Blue cheese crumbles are $3.49 and we used about ¼ or 44c
  • Butter adds 75c per serve
  • Sugar snap peas were $4.99 and we shared ⅓, or 83c per serve.

Grilled mushrooms have their own “meaty” flavor and when paired with the onion blue cheese “steak” sauce, there’s no sense of missing meat. A great sauce on good mushrooms with a refreshing side for $4.22 per serve.

Oct 7: Sweet & Spicy Tuna Melt; Red Wine and Mushroom Meatloaf, Kabocha Squash and Sugar Snap Peas

Because of an odd schedule we had an early, partial lunch of a single Sweet & Spicy Tuna pouch with capers and Swiss toasted.
