Jul 19: Chicken Leg with Cucumber Strawberry Salad

We had Speck And Argula on a Ciabatta Baguette smeared with a little Mayo.

  • The Duke’s Mayonnaise adds 25c per serve.

A very tasty sandwich for $3.18 per serve. The smear of Mayo on the top of the Baguette worked better than the Delice de Bourgogne we tried last time.

Dinner

A simple meal utilizing the Chicken Legs from last week’s Rotisserie purchase, served with a long time favorite: Cucumber and Strawberry Salad.

  • The Chicken was $4.97, or $1.25 per serve
  • The Cucumber was $1.37 and we used half or the original, or 35c per serve
  • The Strawberries were $1.29 and we used ¾ or 49c per serve
  • Add 60c per serve for Balsamic Vinegar.

It had been too long since we last had the Cucumber Strawberry Salad, and that’s a pity as it’s great and contributed the most flavor to this $2.69 meal.

Jul 18: Eloté

Lunch

Since we had Smoked Salmon in the fridge, we decided to go with tradition and put it on a Bagel.

  • The Brioche Bagel is 58c
  • The Smoked Salmon pieces were $1.38 per serve
  • Add 45c for Cream Cheese
  • Add 40c for Cucumber, Onion Sprouts & Capers.

As always a great sandwich for $2.81 per serve.

Dinner

When good looking fresh Corn appears, it’s time to change plans and cook Eloté.

  • Corn was $2.07 or an average of $1.04 per serve
  • The Cotija was $3.59 on special and we used about ⅓, or 60c per serve
  • Add 80c per serve for Mayo, Yoghurt and Chipotle sprinkle.

A very enjoyable meal for $2.44 per serve.

Jul 17: Lettuce Wraps with Caramelized Ginger Pork, Bean Sprouts and Mint

We returned to the Rotisserie Chicken, Heirloom Tomato and Baguette.

  • The Chicken was $4.97 and we shared a Breast, or 63c per serve
  • The Aldi ‘Bake at Home’ Baguette was $1.89, but we shared half, or 48c per serve
  • We shared half a Heirloom Tomato for 58c per serve
  • The Garlic Spread adds 60c per serve.

A very tasty sandwich for $2.29 per serve.

We finished the Caramelized Ginger Pork in Lettuce Wraps with blanched Bean Sprouts and Mint.

  • The Caramelized Pork is $2.25 per serve
  • Add 25c per serve for Artisanal Lettuce
  • Add 40c for Bean Sprouts
  • Add 40c for the Nam Pla Sauce.

As always, a tasty meal for $3.30 per serve.

Jul 16: Smoked Salmon Pizza with Pickle Salad

It was time for a Nashville Hot Chicken Sandwich from Skewers, so we indulged in our favorite sandwich for $11.85 per serve with a shared Fries.

Dinner

Because we had forgotten to make the Moon Blushed Cherry Tomatoes, we had to delay our “fishy Friday” until today when it was time for our favorite pizza.

  • Sockeye Smoked Salmon pieces were $5.49 or $2.75 per serve
  • The Pizza Dough was $1.49, or 75c per serve
  • We used semi-dried Cherry Tomatoes for 60c per serve
  • About two ounces of Neufchatel went on each Pizza, or 25c per serve
  • Preserved Lemon adds 5c per serve
  • Pickled Beets adds 25c per serve
  • Arugula adds 10c per serve.

A super tasty Pizza for $4.75 per serve.

Jul 15: Tortellini Antipaso Salad

Foodie Greg did a shopping trip to Amazon Fresh and came home with a rotisserie Chicken and Heirloom Tomato.

A new recipe tonight: Tortellini Antipasto Salad with Salami, Olives, Roasted Red Peppers, Shallot, Cherry Tomatoes and Arugula topped with shaved Parmesan.

  • The Spinach Tortellini was $2.99 or $1.50 per serve

  • The olives come in a $4.49 jar, and we used 1/4, or 56c per serve
  • A jar of Roasted Red Peppers was $4.49 and we used ¼, or 56c per serve
  • Cherry Tomatoes add 35c per serve
  • The Arugula adds 50c per serve
  • Add 60c for Parmesan

It was a pretty decent meal, with a variety of interesting flavors for $5.57 per serve. As we had quite a lot left over, this would have easily served another person.

Jul 14: Sous Vide Poached Shrimp on Parmesan Risotto with Arugula and Parmesan Salad

We enjoyed a Ham Salad Sandwich for lunch.

  • Ham is 92c per serve
  • Add 30c for Mayonnaise
  • Add 40c for salad ingredients.

A tasty sandwich for $2.36 per serve.

Dinner

Continuing our informal ‘Italy’ week, we topped som Parmesan Risotto with Poached Shrimp and served with an Arugula and Parmesan Salad.

  • The Parmesan Risotto came with its own flavoring for $2.96 on special, or $1.48 per serve
  • The Shrimp is $7.99 on special,  or and we used a bit over half or $2.50 per serve
  • Arugula adds 30c per serve
  • Add 50c for Parmesan
  • Add 40c for Balsamic Vinegar.

A really great meal for $4.88 per serve. The Risotto kit was more appropriate for us than buying a large bag of Arborio Rice.

Jul 13: Caramelized Ginger Pork on Bean Sprouts with Cherry Tomatoes and Cucumber

Today’s lunch deviated to old fashioned, Tasmanian children’s party food! When Foodie Philip was young, a party food was Mashed Potato wrapped in Devon (processed meat). We added some sliced Shallot for a little texture and for a flavor hit.

  • Prepared Mashed Potato is $3.64 and we shared ¼, or 49c per serve
  • The Deli Ham was $3.79 and we shared ¼, or 48c per serve
  • Add 5c for peeled Shallot
  • Mint came from our garden.

A tasty, and quite inexpensive meal for $1.02 per serve.

Dinner

A favorite meal is one based on the Caramelized Ginger Pork, which usually brings two meals. The first was served on blanched Bean Sprouts, with Cherry Tomatoes and diced Cucumber.

  • The ground pork was $6.99 and we’ll get four serves from that, or $1.75 per serve
  • Add 50c for ginger, shallot, garlic and chili, etc
  • Add 60c for Cherry Tomatoes
  • The Cucumber was $1.37 and we used ¼, or 35c per serve
  • The Bean Sprouts were $1.59 and we shared half, or 40c per serve.

Always a tasty meal – it’s the Fish Sauce – for $3.85 per serve.

Jul 12: Pork Saltimbocca with Lemon Green Beans

Lunch

For lunch we had Shin Ramen with Cabbage for $1.67 per serve.

Dinner

Although couldn’t get boneless thin-cut Pork Chops, we went ahead and used some bone-in versions.

  • The Pork Chops were $9.49 for almost a pound of Pork, or $4.75 per serve
  • Green Beans add 62c per serve
  • The Lemon came from our garden.

The Speck on the Saltimbocca is like an improved Bacon – it has a very similar flavor profile, but doesn’t break up when it’s crips. Saltimbocca has quickly become one of our favorite meals for $5.37 per serve.

Jul 11: Spinach and Ricotta Manicotti with Marinara Sauce

Lunch

We enjoyed a Speck and Arugula Ciabatta, although for variety we smeared Delice de Bourgogne on the Ciabatta first!

  • The Ciabatta is 58c per serve
  • The Speck was $3.99, or $2.00 per serve
  • Arugula adds 40c per serve
  • The Delice de Bourgogne was $5.38 and we shared 1/8, or 34c per serve.

The Delice de Bourgogne competed with the Speck a little so next time we’ll use plain Cream Cheese. Still, pretty good for $3.32 per serve.

Dinner

For tonight’s Meatless Monday we heated some prepared Spinach and Rocotta Manicotti in Marinara Sauce.

  • The Manicotti were $5.29, which equates to $2.63 per serve, although neither Foodie finished their allotted portion
  • The Aldi Marinara Sauce was their Special Selected brand and slightly more expensive than our regular Aldi Organic Marinara Sauce, but still quite good for $2.00 per serve.

A decent meal that tasted good for $4.63 per serve.

Jul 10: Italian Inspired “Cobb” Salad

What could be better on a Saturday than Giant Baked Beans on Italian Bread Toast and topped with melted Gouda?

  • The Giant Baked Beans are $1.99 or $1.00 per serve
  • Italian Bread is 38c per serve for two slices
  • Gouda adds 34c per serve.

As always a simple, but tasty, lunch for $1.72 per serve.

We enjoyed our Italianized Cobb Salad so we repeated it.

  • The Burrata was $4.99 or $2.50 per serve
  • A Pastured Egg is 50c per serve
  • An Avocado is $1.29 and we shared one, or 65c per serve
  • The Grape tomatoes cost $2.49 or 63c per serve

  • Add 30c for Balsamic Glaze.
