Feb 6: Coquilles Saint Jacques

Lunch

Our fake “English Breakfast” included Italian Toast, Giant Baked Beans, Bacon and Fried Eggs.

  • The Giant Baked Beans are $1.99 or $1.00 per serve
  • Eggs are 76c per serve
  • Bacon was $4.99 and we used four of 10 slices, or $1.00 per serve
  • The Italian Bread adds 38c per serve.

A very enjoyable lunch for $3.14 per serve.

Dinner

Our attempt at a Scallop Pie back in December was not all that successful, so Foodie Greg thought we should try this easy Coquilles Saint Jacques recipe from Ina Garten.

  • Mushrooms were $2.17, or $1.09 per serve
  • Bay Scallops were $5.99 per pound, or $3.00 per serve
  • Butter adds 35c per serve
  • Clam Juice is $3.39 and we used about half, or 85c per serve
  • Sour Cream is $3.99 and we used â…› or 25c per serve
  • Add 40c for other ingredients.

This was a very excellent dish, although in truth we shared three serves! The Velouté was very flavorsome and the Mushrooms – surprisingly – enhanced the overall flavor. The Bay Scallops were tender and flavorsome contributing to a very enjoyable and tasty meal, that wasn’t hard to prepare, for $5.94 per serve.
