Another cold day, another can of Aldi Potato Soup for $1.05 per serve.

Dinner

We had been planning this Cheesy Garlic Parmesan Spaghetti Squash recipe for over a week, but plans kept changing.

  • The Spaghetti Squash was $3.39 or $1.70 per serve
  • The Neufchatel adds 20c per serve
  • Four Cheesy Mix adds 35c per serve
  • Add 30c per serve for other ingredients.

While tasty enough, it was still Spaghetti Squash! An okay meal that we probably won’t repeat, for $2.55 per serve.

Dec 19: Spanish Mussels with Chorizo and Tomato-Wine Sauce

Lunch

For lunch we repeated our Chorizo, Bell Pepper and Gouda toasted sandwich.

  • The Dave’s Killer Bread is 74c per serve
  • Gouda is 34c per serve
  • The Chorizo was $4.72 and we used half, or $1.18 per serve
  • Fire Roasted Peppers cost $1.99 and we used half, or 50c per serve.

An excellent sandwich for $3.76 per serve.

Dinner

Tonight’s deliciousness was Spanish Mussels with Chorizo and Tomato-Wine Sauce, again without the Heavy Cream.

  • The pre-cooked Mussels were $2.29 or $1.15 per serve
  • Sherry adds 58c per serve
  • The Chorizo was $5.11 after all discounts and we used half, or $1.28 per serve
  • Add 85c for other ingredients
  • The Italian Bread is 29c per serve
  • The Garlic Spread adds 40c per serve.

A very tasty meal, and a favorite of Foodie Greg’s, for $4.56 per serve.

Dec 18: Red Wine and Mushroom Meatloaf with Japanese Sweet Potato topped with Sour Cream

We shared a Bistro Style Mushroom Flatbread that was a special buy at Aldi for $2.1o per serve. We bother liked it a lot, but as a special buy, there are no more.

Dinner

A return to Foodie Greg’s favorite Meatloaf: Red Wine and Mushroom. Tonight we served with Baked Japanese Sweet Potato topped with Sour Cream and Onion Sprouts.

  • The grass fed Ground Beef was from Aldi for $5.49 per pound, or 92c per serve
  • Baby Bella mushrooms were $1.99 or 34c per serve
  • Onions and garlic add 5c per serve
  • Two medium eggs are 64c or 11c per serve
  • The butter is $3.99 per block, and we used about 3/8 for four serves, or 25c per serve
  • Red wine adds $1.00 or 13c per serve
  • Add 10c for Worcestershire sauce and other spices per serve
  • The Murasaki Sweet Potato was $3.99 for 10, or 40c per serve
  • The Sour Cream was $2.99 and we used a tiny amount, or about 15c per serve
  • Add 15c for Onion Sprouts.

This is always a very tasty meal. The Japanese Sweet Potato is nowhere near as sweet as the orange US variety, which we prefer. A very good meal for $2.60 per serve.

Dec 17: Striped Bass with Avocado, Sour Cream and Oven Fries

Lunch

We finished the last of the Cuban Roast Pork in a hot Panini Roll with Coleslaw.

  • The Panini Roll is 63c
  • A full serve of the Pork is $2.93, but shared one serve, or $1.47 per serve
  • Add 30c for Coleslaw.

A very satisfying and tasty sandwich for #2,40 per serve.

Dinner

A simple meal of pan seared Striped Bass, served with Avocado, Sour Cream and Sweet Chili Sauce, and a side of Oven Fries.

  • The Striped Bass was $4.68 per serve
  • The Oven Fries were $1.49 and we shared half, or 38c per serve
  • An Avocado is 69c, or 35c per serve
  • Add 25c for Sour Cream
  • Add 25c for Sweet Chili Sauce..

A very good meal for $5.91 per serve.

Dec 16: Beef Massaman Curry

Lunch

We finished the remaining half of the Frittata with a side salad.

  • The Frittata was $1.77 per full serve, or 89c per serve
  • Add 30c for Mixed Greens
  • Add 25c for Cherry Tomatoes.

A tasty lunch for $1.44 per serve.

Dinner

We had planned pick up take-out food tonight, but the weather outside was frightful, so we cooked Beef Massaman Curry instead.

  • The Beef Stew Meat from Aldi was $5.94 or $2.97 per serve
  • The curry is $3.38 per can or $1.69 per serve
  • Coconut milk is $1.69 per can or 86c per serve
  • Peanuts were $2.99 but we only used half, or 75c per serve
  • Carrots were $1.99 or 50c per serve
  • Potatoes add 34c per serve
  • Add 20c for other ingredients.

The Beef became very tender and contributed to a very tasty and warming Curry for $7.31 per serve.

Dec 15: Chickpea Masala with Prosciutto and Eggs

Lunch

For lunch we had Shin Ramen Buttered Noodles with Coleslaw Mix for $1.63 per serve.

Dinner

Tonight’s interpretation of Chickpea Marsala, features Prosciutto and Eggs.

  • The Marsala Sauce was $3.79 or $1.90 per serve
  • Two Pastured Eggs adds 66c per serve
  • The Chick Peas were $1.79 or 90c per serve
  • The Prosciutto was $4.65 or $2.38 per serve.

You would think the Prosciutto was the star of this dish, but we felt that it really didn’t add anything to the dish. It was difficult to place, difficult to serve and difficult to eat as it required a knife. Combine that with it not really improving the flavor, it was a mildly disappointing dish for $5.84 per serve. We will definitely do the dish again, but without the Prosciutto.

Dec 14: Ham and Cheese Frittata

Lunch

Another cool day made Trader Joe’s Spanakopita very appealing for $3.99 or $2.00 per serve.

Dinner

Foodie Greg was still under the weather, so we cooked a simple Ham and Cheese Frittata. although only half was eaten.

  • Pastured Eggs add 66c per serve
  • The Breakfast Ham is $2.99 for six, or 25c per serve
  • Four Cheese Mix adds 86c per serve.

Foodie Philip’s presentation isn’t as good as Greg’s, but it was tasty for $1.77 per serve.

Dec 13: Cubano Sandwich

As the weather turns to California’s version of Winter, we enjoyed the Aldi Potato Soup for $1.00 per serve.

Dinner

We swapped our Meatless Monday until tomorrow so we could enjoy a Cubano tonight.

Dec 12: Cuban Style Roast Pork with Cuban Black Beans and Brown Rice

We had a tried-and-true lunch of Giant Baked Beans on Italian Bread, topped with melted Cheese.

A decent lunch for $2.36 per serve.

A welcome return to Cuban-Style Roast Pork with Mojo Sauce, tonight with a Black Bean Salad and Brown Rice. We will get four serves from the Pork.

  • The Pork Butt was around $8.55 , or $2.14 per serve
  • Limes were 56c or 14c per serve
  • Grapefruit was $1.39 or 35c per serve
  • Navel Oranges were $1.19 or 30c per serve
  • Cuban Black Beans were $1.99 or $1.00 per serve
  • Add 34c for Brown Rice.

It’s a favorite because it tastes good, but there’s a magic in turning a “second rate” cut of meat, usually cooked for Pulled Pork, into a tasty roast, for $4.27 per serve.
