Feb 28: Turkey Breast & Swiss, Baked Beans & Swiss; Tom Kha Moo; Lamb Loin Chops with Farro, Beets and Feta Salad

We pretty much repeated Tuesday’s lunch: turkey breast with sun dried tomato spread and Swiss; Giant Baked Beans and Swiss.

  • The turkey is $3.49 and we shared ⅓ or 58c per serve
  • Sprouted rye bread is 32c per serve
  • The Giant Baked Beans are $1.99 per can and we shared ⅓ or 33c per serve
  • Swiss slices are 12 for $3.99 or 34c per serve
  • Add 40c for butter, garlic spread, and sun dried tomato spread.

Toasted baked beans with melted cheese is particularly good. A pair of decent sandwiches for $1.97 per serve.

Dinner

Although Thursday night is “steak night” we interpret it more as our carnivore night! Tonight we grilled lamb loin chops and served them with a farrow, beet and feta salad.

  • The lamb loin chops were $22.99 or $11.40 per serve
  • The feta was $6.49 but we used ¼ or 82c per serve
  • Pickled beets in vinaigrette are $1.69, of which we used about ⅓ or 28c per serve
  • The farro was $1.79 for the pack, but we shared ⅓ or 10c per serve
  • Add 10c for Apple Cider Vinegar on the salad.

The lamb chops were perfectly grilled and moist inside, while the salad was a great accompaniment in a great meal for $12.70 per serve.

Feb 27: Turkey Breast, Hummus & Tabouli in a Baked Panini Roll; Pizza

Lunch

Today we stuffed a baked rustic panini roll with slice turkey breast, hummus and tabouli.

  • The turkey is $3.49 and we shared ⅓ or 58c per serve
  • The roll is 63c
  • Hummus is about 30c per serve
  • Tabouli was $2.69 and we used about ⅓ or 45c per serve.

The hot roll was good on a cool day, and the filling tasty. A good choice for $1.96 per serve.

Dinner

Tonight is our monthly user group meeting where we contribute $10 each to cover the cost of pizza.

  • Add 25c for seasonings
  • Brown rice adds 33c per serve.

Dinner tonight might not look pretty but it tasted good for $3.36 per serve.

Feb 25: Wild Mushroom & Farro Soup; Mushroom and Bok Choy Savory Oatmeal

Lunch

For lunch we finished the Wild Mushroom and Farro soup with a rustic panini roll.

  • The roll is 63c
  • The soup is $3.17 per serve.

Lunch today was enjoyable for $3.80 per serve.

Dinner

Today’s Meatless Monday is Savory Oatmeal with mushrooms and bok choy.

  • Mushrooms were $3.99 or $2.00 per serve
  • The steel cut oats are $3.49 for 24oz, and we used 8oz or 58c per serve
  • The bok choy was $1.99 for four, or 50c per serve
  • Add 30c for oatmeal seasonings.

A tasty dish without being terribly exciting for $3.38 per serve.
