Feb 14: Split Pea Soup, Rustic Roll with Fromage; Beef Massaman Curry

For lunch we heated the remaining Split Pea Soup, finished a par baked panini and stuffed the panini with a soft French “Fromage” (i.e. cheese).

A great warming meal for $1.89 per serve.

Dinner

With stew beef in our Keller Crafted meat box, and cold weather, we naturally went for Beef Massaman.

  • The beef was $8.84, or $4.42 per serve
  • The curry is $3.38 per can or $1.69 per serve
  • Coconut milk is $1.69 per can or 85c per serve
  • Peanuts were $2.99 but we only used half, or 75c per serve
  • Peal onion adds 20c per serve
  • Black rice adds 44c per serve,

As always this is a warming, tasty meal for $8.35 per serve.

Feb 13: Pulled Pork Roll; White Pork Chili

Lunch

For lunch we finished some par baked rustic panini rolls and stuffed them with reheated pulled pork.

  • The pulled pork is $4.18 per serve and we shared a serve, or $2.09 per serve
  • The roll is 63c.

The pulled pork in a hot, crunchy roll makes a perfect cold weather lunch for $2.72 per serve.

Dinner

We finished the white (pork) chili recipe from last night. It had thickened slightly but was still a very loose chili. Good for $4.14 per serve.

Feb 12: Breakfast; White (Pork) Chili

Breakfast

The Foodies don’t generally eat breakfast, preferring an early lunch and keeping food intake time slightly restricted, but about once a month we attend a hosted community breakfast, where we enjoyed a bacon and egg brioche.

Dinner

Foodie Greg like to find different ways to use our monthly delivery of ground pork. Tonight he adapted a chicken chili to ground pork (the other white meat) and it was pretty good. The recipe makes four good serves.

  • The ground pork was $8.35 or $2.09 per serve
  • Chicken broth is $1.99 or 50c per serve
  • White beans are 99c a can or 50c per serve
  • The jalapeño chili was 15c or 4c per serve
  • Add 10c per serve for onion and garlic
  • Frozen corn was $1.29 and we used half, or 16c per serve
  • Add 55c for seasoning, lime juice, labné and crushed tostadas.

Despite expecting the recipe to thicken with the blended beans, this was a very loose chili, with a texture more like soup! It has a fairly mild flavor, probably because we could only get one jalapeño and no poblano peppers. Quite enjoyable for $4.14 per serve.

Feb 11: Turkey, Swiss & Sun Dried Tomato Paste, Sweet & Spicy Tuna with Swiss; Vegetable Gyoza in Ginger Miso Broth

While our lunches over all are quite varied, sometimes we end up repeating the same sandwiches, like today’s two. One with turkey breast, Swiss and sun dried tomato paste and the other with Sweet & Spicy Tuna and Swiss.

Being Meatless Monday and without much time to plan, we returned to our staple: Vegetable Gyoza and Ginger Miso Broth

  • A pastured egg is 51c.

A great tasting, simple and quick meal for $3.71 per serve.

Feb 10: Sausages, Baked Beans & Fried Egg; Pulled Pork, Cumin Roasted Carrots and Balsamic Roasted Pearl Onions

We often put more effort into a weekend lunch, so today we did a full on “English” breakfast of Turkey, Spinach and Feta sausages – from Keller Crafted – with Giant Baked Beans, fry toast and a fried egg.

Dinner

In every Keller Crafted box is a shoulder, butt or other slow roast meat. Slow roasting or braising these working muscles releases flavor and turns the meat into something tender and unctuous. We did a slow braise in stock with onions and pulled the results before serving.

  • The pork was $21.15 and we will get six good size serves, or $3.53 per serve
  • Onion and garlic add 25c per serve
  • Chicken stock adds $2.00 or 40c per serve
  • The missed color carrots were $3.99 but we only roasted half, or $1.00 per serve
  • Frozen pearl onions are $1.69 but we only used ¼ of the pack, or 43c per serve
  • Add 35c for cumin and balsamic vinegar.

We love pulled pork, and this was a great meal for $5.96 per serve.

On a day of do-overs we finished the Cottage Pie from a few nights ago.

  • Beef stock is $1.99 but we used ¼ or 13c per serve
  • Add 20c per serve for butter
  • Add 30c per serve for flour and seasonings.

It was definitely warming and filling for $4.07 per serve.

Feb 8: Turkey, Swiss & Sun Dried Tomato Paste, Sweet & Spicy Tuna with Swiss; Smoked Salmon with Pepper Roasted Cauliflower

We decided to pull our stove top smoker out of semi-retirement to smoke some wild caught salmon that we got (frozen) from Trader Joe’s. We paired it with some Pepper Roasted Cauliflower.

We got much better results this time because we moved the smoker from the induction cooktop to our regular range.

  • The salmon fillets were $10.31 or $5.16 per serve
  • The green cauliflower was $3.22 or $1.71 per serve
  • Add 20c for pepper and soy sauce.

The salmon turned out perfectly, with great smoke taste. The cauliflower was a little undercooked at the recommended time, but still tasty. A good “fishy Friday” for $7.07 per serve.

Feb 7: Chili & Swiss in a Rustic Roll; Sous Vide Pork Chop with Apple Stew

For lunch we finished baking two panini roll, stuffed in some Swiss cheese and filled with hot Bacon and Black Bean Chili, finally finishing the chili!

While a little messy, this was really tasty for 97c per serve.

Dinner

One of our favorite items in the Keller Crafted meat box are the dry aged, bone in pork chops. Tonight we souse vidé them to 135 degrees and then pan seared them for color. That’s a little lower than normally recommended for medium, but with the pan sear, it turned out perfectly.

The Apple stew was left over from two nights ago.

  • The apple stew was $5.70 per serve
  • The pork chop was $12.20 per serve
  • Add 20c for butter.

The pork chop was perfect. Juicy, but cooked to a perfect medium rare, we both thought it was the best pork chop we’ve ever had. The Apple stew, with some remaining pork flavor, was a perfect side. An expensive home cooked meal, but one worth every penny at $18.10 per serve.

February is soup and stew weather, as you can probably tell. As it was particularly cold today (for Souther California) we heated some of the remaining split pea soup, and served with a baked rustic panini roll.

A Cottage Pie – the beef version of a Shepherd’s Pie – is a warm, filling dish, but it sure makes a lot of dirty dishes! We get four serves from the ‘pie.’

  • A can of coconut milk was $1.69 or 43c per serve
  • Bacon is $4.99 for the pack and we used 40%, or 50c per serve
  • The sweet potato was $1.97 or 49c per serve
  • The Apples were $5.31 or $1.33 per serve
  • Chicken Broth is $1.99 or 50c per serve
  • We substituted hard cider with sherry and apple cider vinegar for 20c per serve
  • Add 50c per serve for seasoning, onion and mustard.

We chose to serve without any filler. This was pretty good for $5.70 per serve.
